The role…
We are looking for an enthusiastic, highly motivated, engaging and truly professional Bar Manager to join the HarBar on 6th team. We are Southampton's destination rooftop bar and terrace, as part of the 5 star Harbour Hotel Southampton.

This is a full time opportunity, to be a key member of the leadership team within the F&B operations, offering up to £38,000 per annum + generous tronc scheme. 

As Bar Manager you will already have experience of supervising staff, an excellent knowledge of wines and cocktails and be able to use this to train and develop the team. As Bar Manager you will lead by example and bring a real flair and passion to achieve service excellence in the department.

Key Responsibilities:
Team Management:
    • Hire, train, and supervise bar team, including bartenders, servers, and support team.
    • Conduct performance reviews and provide feedback to improve skills and performance.
    • Schedule shifts, ensuring adequate coverage during peak hours and events.
    • Handle staff conflicts or issues and maintain a positive work environment
Customer Service:
    • Ensure that all guests receive excellent service and resolve customer complaints in a professional manner.
    • Monitor guest satisfaction and take steps to enhance their experience.
    • Interact with customers to create a welcoming atmosphere.
Inventory Management:
    • Oversee the purchasing, stocking, and inventory control of alcohol, mixers, garnishes, and bar supplies.
    • Keep track of stock levels and place orders to replenish inventory as necessary.
    • Monitor and control wastage and theft, ensuring proper use of stock.
    • Implement inventory audits to ensure accuracy.
Financial Management:
    • Prepare and manage budgets, ensuring that the bar operates within financial parameters.
    • Monitor sales, set pricing strategies, and ensure profitability.
    • Handle cash flow, process transactions, and track financial records.
    • Report on financial performance, including daily, weekly, and monthly sales.
Compliance and Safety:
    • Ensure the bar is compliant with local alcohol laws and regulations.
    • Maintain health and safety standards, including hygiene and cleanliness.
    • Train staff on responsible alcohol service and safe practices.
    • Monitor and enforce age verification procedures.
Menu Development:
    • Create and update the drink menu, including seasonal specials, signature cocktails, and promotions.
    • Develop drink recipes, ensuring consistency and quality.
    • Stay current with trends in the beverage industry and incorporate them into the menu.
Marketing and Promotions:
    • Plan and execute events and promotions to attract customers and increase revenue.
    • Collaborate with the marketing team or management to develop marketing campaigns and social media strategies.
    • Build relationships with regular customers and create loyalty programs or incentives.
Facility Management:
    • Ensure the bar area is clean, organized, and properly maintained.
    • Coordinate with maintenance staff for repairs or any needed improvements.
    • Oversee the proper use of bar equipment and utensils.
Reporting and Administrative Duties:
    • Keep track of team attendance and labour costs.
    • Prepare reports for upper management, including financial, scheduling, and customer feedback reports.
    • Handle any necessary paperwork, including incident reports or other administrative tasks.

Ideal Skills and Qualifications:
  • Proven experience as a Bar Manager or in a similar managerial role in the hospitality industry.
  • Strong leadership, interpersonal, and communication skills.
  • Excellent knowledge of bar operations, including inventory management, budgeting, and customer service.
  • Ability to multitask and prioritize in a fast-paced environment.
  • In-depth knowledge of alcohol laws and health & safety regulations.
  • Ability to work long hours, including nights, weekends, and holidays.
Preferred Skills:
  • Knowledge of mixology and cocktail preparation.
  • Experience with POS systems and bar management software.
  • Ability to train and develop staff effectively.
